Table Talk Tuesday - Easy, Cheesey Stove Top Mac & Cheese

Hello, hello!!

Welcome back to A Mascara Moment!

We had a couple of cold, windy, rainy days and everyone was in need of a little comfort food to zap the chill away!

I decided to whip up a super easy Mac & Cheese.  It was a huge hit with everyone, especially my two year old!  He loves Mac & Cheese and I love making him home made food.  I do try to stay away from the KD variety, although he does get that occasionaly when I am being super lazy, or he is being super picky about what he will eat!

Ingredients





16 oz Elbow Macaroni
1/4 cup butter
1/4 cup flour
2 cups whole milk
2 cups shredded medium cheddar



Directions




Over medium heat, melt butter and then add the flour.


Cook the flour and butter for 3 minutes, stirring constantly.

We just made a Roux!


Add the milk and cook until it thickens and boils.  Again, stir constantly.


It should be the consistency of slightly runny icing.


Add the cheese and stir, stir, stir until melted and combined.

This is our completed cheese sauce!



Add the cooked and drained noodles directly into the cheese mixture.  Stir to coat!

This took about 20 minutes to make.  It is labour intensive in the sense that you can't leave the roux or the cheese sauce alone.  It must be stirred constantly!



Serve and enjoy!
