Table Talk Tuesday - Black Bean Burgers

Hello, hello!

Welcome back to A Mascara Moment!!

Happy Valentines Day to you all!!

Today we are going to be making one of my go to lunch meals.  I cook up a bunch of these and eat them for lunch with a salad.  They can be cooked and frozen.  I take one out of the freezer in the morning and it is defrosted by lunch.\

  • 1 can Black Beans
  • 1 cup oatmeal
  • 1/4-1/2 Grated White Onion
  • 1 Large Egg
  • Salt And Pepper

  • Add the oatmeal into a food processor and grate until it is the consistency of bread crumbs.

  • Remove the oatmeal crumbs and add the onion into the food processor.  Pulse until roughly chopped.

  • Add the black beans to the onion and continue to pulse until the mixture is mostly smooth.

  • Add the breadcrumbs, egg and seasoning and pulse until combined.  If you over pulse and the mixture is too goopy, just add more oatmeal crumbs until it combines nicely.

  • Shape the mixture into 6-8 thin patties.  The mixture will be sticky, like a paste, but should combine with ease
  • In the frying pan, add a little oil or butter and heat to medium
  • Fry on the stove top for 3-5 minutes a side.  I wait until the first side has a nice crust and then flip and cook for another 5 minutes.  Keep an eye on them as they burn easily.

  • Serve as a traditional hamburger or with a salad

Enjoy and let me know if you try this!

Take care and I will talk to you tomorrow for a very real What I Wore Wednesday!
