Table Talk Tuesday - Nonna's Banana Cake with Cream Cheese Icing

Hello, hello!!

Welcome back to A Mascara Moment.

Today we are talking about food.  I am going to start this off with a recipe I make every year on January 3rd.  January 3rd is my Mum's birthday.  By this time we have had Christmas and New Year eats and no one wants more sweets.  That is where this Banana Cake shines.  It is sweet without being too sweet and un-iced is really just a muffin!

This is my grandmother's recipe with my addition of Cream Cheese Icing.  I don't think my grandmother made this up herself.  It probably came from a magazine or recipe book, but I do not know which one.  I have been eating it since I was a child and making it since I was old enough to bake on my own.

Ingredients






Banana Cake (Cupcakes)


2 cups Flour
4 tsp Baking Powder
1 tsp Baking Soda
1 tsp Salt

1 cup melted butter
1cup white sugar

4 eggs
4 bananas
2 tsp Vanilla



Cream Cheese Frosting


1 cup Cream Cheese
2 cups Icing Sugar
1-2 tsp Lemon Juice

Instructions

Banana Cake (Cupcakes)

Preheat Oven to 325F

Melt the Butter and put to the side to cool.  (You don't want the butter to be hot when you start mixing.  It dissolves the sugar and makes the recipe impossible)

Sift or stir the flour, baking powder, baking soda and salt together and put to the side.

In a clean bowl, whisk the cooled melted butter and sugar until it is well mixed and a light yellow colour.  This can take 5-10 minutes depending on whisking method.  Keep stiring.  If you don't mix them together enough it makes the cake oily.

Whip the butter mixture until it resembles icing.  Very light yellow and creamy looking.

Add the eggs to the butter/sugar mixture.  Then the bananas and vanilla.

Switch to a spoon and stir in the flour, a little at a time.



To Make Cupcakes (makes 24)
Spoon 2 heaping tablespoons into each cupcake tin.
Bake for 25 minutes (until the tops are golden brown and a toothpick comes out clean)
Let cool and then top with icing as sloppily or neatly as desired.



To Make Cake (makes 2-8" rounds)
Divide the batter between the two buttered pans
Bake for 50-60 minutes.
Remove from oven and let cool
Assemble and add icing as desired.



Cream Cheese Icing
Add everything to a bowl and whisk until incorporated.  Will be dense.

I like to just dollop the icing on and roughly smooth it out.  This is a casual dessert and I don't like to get too fancy with it!
