Table Talk Tuesday - 2 Ingredient Banana Pancake Fail

Hello, hello!!

Welcome back to A Mascara Moment. 

Today we are making a very simple, much raved about item.  I have seen this recipe floating around, seen easy how to YouTube videos on this recipe, but I have never tried it.

I had a ripe banana sitting lonely on the kitchen counter and thought I would finally attempt it.

Now, let me tell you, this started as a huge fail and then turned itself around, only to be a total fail.


  • 1 Ripe Banana
  • 2 Large Eggs
  • Cinnamon (optional)


Crack and whisk the eggs.

Mash the banana until smooth

Add the eggs to the banana and mix well.

My egg/banana mixture was very runny, like an omelette.

Pour a small, thin amount into your greased frying pan.  I used medium high heat, setting 6.

You can sprinkle with cinnamon if you like.

Cook for 1-2 minutes on each side.  You will know it is ready to turn when it takes on a darker (omelette like) colour.

Plate and eat as is or with butter and syrup.

My Results

Attempt 1

This did not go well.  I had the heat setting on 4 and did not grease the pan.

Attempt 2

This attempt was much better.  I increased the heat to 6 and greased the pan with a little olive oil.

They flipped easily and I cooked them for 2 minutes one side, 1 minute the other side.

Final Results

They look great and after a few attempts they cooked evenly.

The ultimate fail came with taste.  My husband did not like them.  My son took a bite and then spit it out.  (He is 2, this is perfectly acceptable).

I did not mind them.  They taste almost like a thin banana quiche.  They do not taste like pancakes.

I would probably not make these again. 

Next time I will just make regular pancakes.  But at least I had a great big breakfast yesterday!
